We pride ourselves in cultivating gourmet mushrooms from start to finish. The mushrooms we produce are grown on a sawdust based medium that we inoculate with organic spawn. We hold the chain of custody from culture to mushroom. Mushrooms are fruited and harvested in our facilities under the ideal climate that we create for them. We harvest every day multiple times to ensure that the mushrooms are always picked at the optimal time for quality and shelf life.

 

Blue Oyster

Pleurotus ostreatus

Blue Oyster Mushrooms are one of the most common types of gourmet mushrooms. Mild in taste, easy to transform into a multitude of dishes and are rich in protein, antioxidants and other essential vitamins for your diet. These mushrooms are a staple in our production and we offer them year-round. Blue Oyster mushrooms are filling, versatile and add beautiful colors and mellow taste to any meal.

 

Lions Mane

Hericium erinaceus

One of our more popular gourmet mushrooms, lions mane gets its name from its shaggy “teeth” . Many people are familiar with Lions Mane due to its medicinal properties. Texturally it shreds apart nicely and has a slightly sweet, umami flavor. We love to use it as a replacement for shredded meat (check out lions mane cakes on our recipe page) or steaks but it is also great just sautéed on its own! Research has found that lion's mane may protect against dementia, reduce mild symptoms of anxiety and depression and help repair nerve damage due to its neuro-regenerative properties. Chestnut

Pholiota adiposa

Chestnut mushrooms have a very distinct, nutty flavor and are definitely a customer favorite! While we try to offer them year round, they do prefer cooler temperatures. Chestnut mushrooms have a slightly mucilaginous cap. Due to this they make a wonderful addition to soups or pan sauces as the sticky cap works well as a natural thickener. Its distinct brown color, crunchy stems and peppery finish is a great addition to any dish.

 

Pioppino

Agrocybe aegerita

Pioppino’s have an excellent depth of flavor and very distinct earthy texture. While most other varieties of mushrooms result in a softer texture, Pioppinos have a fibrous stem that holds up to cooking well and produces a crunchy stem. These mushrooms will roast or grill well and pair nicely with deeper and more complex flavors.

Comb Tooth

Hericium coralloides

Comb Tooth comes from the same Genus as Lions Mane, and offers many of the same medicinally benefits. This mushroom offers great texture resulting in nice “chew” and a more savory flavor than Lions Mane. With more surface area to offer it crisps up nicely and can be roasted or sautéed. Our favorite way to prepare Comb Tooth is to chop it up finely and make mushroom tacos. It is an excellent ground meat replacement!

Black Pearl Oyster

(aka Queen Oyster)

The Queen Oyster is a dense, meaty mushroom that has a pearlescent cap color. Their density is not quite that of a King Oyster, and their flavor profile is more similar to a Blue Oyster so we have appropriately named these as the Queen Oysters. They hold their shape well after cooking and have a mild flavor that is approachable for any dish. Queens Oysters in the Queen City, what a perfect duo!

King Oyster

Pleurotus eryngii

King Oysters are highly sought after due to their extremely dense texture and beautiful white interior. They offer a very meaty base that can create unique dishes such as vegan steaks and scallops. King Oysters prefer cooler temperatures so we prefer to grow them in the cooler seasons.

White Oyster

Pleurotus ostreatus

We commonly grow white oysters in the cooler months. These bright white beauties offer mild flavor and hold up nicely in any dish. Their delicate texture lends itself wonderfully to pasta dishes and curries.

Shiitake

Lentinula Edodes

We consider Shiitake’s to be mild in flavor with a buttery taste and substantive in their texture. They make an excellent meat replacement and are very approachable for the new gourmet mushroom enthusiast! Shiitakes are great to add to any dish, especially stir fries, soups, or simple sautés. Pro-tip: save the stems and make an umami rich mushroom broth. Please note: We do not consistently grow Shiitake any more. We will have them randomly, but not every week.

Pink Oyster

Pleurotus djamor

Pink Oysters have a very robust flavor and texture. They have a bit more dense texture than other oyster mushrooms and have been compared to the texture of bacon or ham. They are a warm weather loving strain, so we only offer these for a few weeks during the summer months.

Golden Enoki

Flammulina velutipes

Golden Enoki is one of our favorites to cultivate due to the fact that it is also a variety that grows native to the area. It has a mild, fruity flavor and scent and pairs wonderfully with ramens, stir fry’s, soups and hot pots. Once cooked it firm texture turns into a silky, earthy addition to your meal. Expert tip: take a slow motion video of the mushroom wiggling. It will be sure to turn any frown into a smile.
